Abstract: This work was based on the documentation of a program of good GMP manufacturing practices for the personal food handler of the Metropolitan Penitentiary and Penitentiary Complex of Cúcuta, based on compliance with resolution 2674 of 2013; The need to mitigate possible food risks was the importance of documenting this program, establishing a cross-sectional documentary-type methodology in situ, for which compliance with good hygienic practices, protection measures and health status of the personnel was evaluated. handler through checklists determining the percentage of compliance as the initial part in which 49.3% did not comply with the checklist of hygienic practices and protection measures, and 17.7% did not comply with the checklist of the state of health, thus giving evidence of the practices and procedures to be improved, continuing with the improvement actions through the education and training process with a methodology with a demonstrative expositional teaching approach, and the evaluation in an active participatory way, giving rise to the learning of the entire handling personnel, and due to its methodology to the adaptation of good processes and practices in the same practice of the day and ending with the proposed objectives with the implementation of corrective actions with the construction of the program for manipulators of the complex, for which it is possible to obtain the process guide and guidelines established by current regulations and the training necessary to co Contributing to good manufacturing practices and therefore food safety in the complex.
