    dc.descriptionEn este trabajo se realizó la obtención de quitina y quitosano a partir individuos de dos especies de avispas Polistes versicolor y Polybia occidentalis. Para conocer la materia prima se realizaron análisis FTIR a las diferentes partes externas de las avispas, encontrando que la estructura de la quitina del tórax es diferente a las demás partes y en las dos especies de avispas. Se establecieron los parámetros más adecuados en los diferentes procesos que involucran la obtención de quitosano como deshidratación de la quitina, desproteinización, desmineralización y desacetilación. Al finalizar cada etapa (mencionada anteriormente) se analizaron las muestras mediante FTIR-ATR, análisis térmico y SEM. Los resultados permitieron establecer la temperatura óptima de secado, el porcentaje de pérdida de humedad, porcentaje de pérdida de proteína, la concentración óptima de NaOH, la morfología superficial del biopolímero y la presencia de dos eventos térmicos y dos pérdidas de masa, debidas a la evaporación del agua y a su degradación. También se determinó el grado de acetilación y desacetilación mediante la relación de A1320/1420.es_CO
    dc.description.abstractIn this work, chitin and chitosan were obtained from two species of wasps, Polistes versicolor and Polybia occidentalis. To know the raw material, FTIR analysis was carried out on the different external parts of the wasps, finding that the structure of the chitin of the thorax is different from the other parts and in both species of wasps. The most appropriate parameters were established in the different processes that involve obtaining chitosan, such as chitin dehydration, deproteinization, demineralization, and deacetylation. At the end of each stage (mentioned above) the samples were analyzed by FTIR - ATR, thermal analysis, and SEM. The results allowed establishing the optimum drying temperature, the percentage of moisture loss, the percentage of protein loss, the optimal concentration of NaOH, the superficial morphology of the biopolymer and the presence of two thermal events and two mass losses, due to the water evaporation and degradation. The degree of acetylation and deacetylation was also determined by the ratio of A1320/1420.es_CO
