This work focused on a structured knowledge of the published information on bees, specially, on the search for the chemical characteristics, correlation, and comparative capacity of the published physicochemical properties of bees and its products with greater commercial circulation. The study shows the need for research in Colombia and the world in general; in aspects such as the identification of local species, morphological and chemical characterization, together with standardized tests in the determination of humidity, pH, acidity, ash, sugars, proteins. and carbohydrates, among other parameters.es_CO
